Tasting Note
Perfumed black cherry and blueberry with violet and rose oil, dark chocolate and licorice. Medium–full-bodied, silky texture, ultra-fine filigree tannins, bright minerality and exceptional, long finish.

Food Pairing
Western: roast lamb, beef fillet, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, soy-braised short ribs, Korean BBQ (bulgogi), shiitake-miso dishes.

Production Method
Hand-harvested; parcel vinification with temperature-controlled fermentation, partial malolactic in barrels; aged ~18 months in French oak (c.65–70% new).
