Tasting Note
Concentrated black cherry, blackberry and plum with violets, cedar, graphite and dark chocolate. Silky, plush tannins, bright freshness and a long, mineral-tinged finish.

Food Pairing
Roast or grilled beef, lamb, duck confit, mushroom dishes; Western: steak au poivre, beef bourguignon. Asian: Peking duck, char siu, braised beef short ribs, soy-glazed mushrooms.

Production Method
Hand-harvested, destemmed, gentle extraction; malolactic fermentation; aged ~18 months in French oak (≈50–55% new).

Château Canon, Premier Grand Cru Classé (B) in Saint-Émilion. Owned by the Wertheimer/Chanel family since 1996; ~21–35 ha on limestone-clay soils; modernized vinification under Nicolas Audebert.
