Tasting Note
Perfumed red and black cherry, plum and violet with graphite, chalky limestone minerality, licorice and dark chocolate; bright saline acidity, elegant, fine-grained tannins and a long mineral finish.

Food Pairing
Western: roast lamb, beef fillet, duck breast, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), soy-braised beef, miso-glazed eggplant.

Production Method
Harvested Sept–Oct 2021; fermented in vats with slight chaptalization (≈0.5–1%); matured 16–18 months in French oak (≈50% new); minimal fining (no fining reported for recent vintages).
