Tasting Note
Perfumed black and blue fruits (cassis, black cherry, blueberry), violet and lavender florals, saline/mineral and iodine notes, cedar and dark chocolate, bright acidity, fine-grained tannins and a very long saline finish.

Food Pairing
Western: grilled steak, roast lamb, roast duck, game, aged cheeses (Comté, mature cheddar). Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised beef, shiitake mushroom dishes.

Production Method
Co-fermented; ~70% whole-bunch fermentation, six-week maceration; élevage 70% new French oak, 20% 18hL casks (foudres), 10% amphorae.
