Tasting Note
Blackcurrant, blackberry, cedar, pencil lead and tobacco on the nose; dense, ripe fruit with refined, grainy tannins and spicy, menthol-tinged finish. Elegant yet powerful.

Food Pairing
Western: roast lamb, beef ribeye, venison, aged hard cheeses. Asian: Peking duck, char siu (Cantonese roast pork), Korean barbecue (bulgogi/galbi), beef rendang.

Production Method
Hand-harvested; fermentation in wood, concrete and stainless vats (separate Merlot vats); malolactic in small tanks; aged c.18–20 months in French oak (portion new).
