Tasting Note
Plummy black-fruit core with cedar, tobacco, coffee and bay-leaf notes. Velvety texture, firm fine tannins, fresh acidity and a medium-long, mineral-tinged finish.

Food Pairing
Western: roast lamb, braised short ribs, grilled ribeye, aged cheeses. Asian: Peking duck, char siu, Korean barbecue (bulgogi), spicy Szechuan beef, mushroom hot pot.

Production Method
Traditional Bordeaux vinification: destemmed fermentation, malolactic conversion, aged ~18 months in oak (majority second-use barrels from the grand vin coopage).
