Tasting Note
Concentrated, mineral-driven Malbec: black cherry, blackberry and violet over graphite and saline minerality. High acidity with fine-grained, pronounced tannins; cocoa, tobacco and subtle orange-zest on a long, savory finish. Age-worthy yet shows silky texture with aeration.

Food Pairing
Western: grilled ribeye, roasted lamb, aged cheddar, mushroom risotto, beef stew. Asian: Korean BBQ (bulgogi/galbi), Sichuan beef, char siu, grilled yakitori, hearty ramen with braised beef.

Production Method
Hand-harvested; fermentation in 225L oak barrels and 500L French roll-fermenters with wild yeasts; 8–16 day maceration; aged ~24 months in French oak (barrels/foudres).
