Tasting Note
Floral and mineral-driven: crushed red berries, blood orange, licorice and black tea with slate and saline undertones. Elegant, silky tannins and vibrant acidity lead to a long, stony finish.
Food Pairing
Grilled ribeye, lamb chops, aged cheeses, Argentine asado; Korean BBQ (bulgogi), Chinese char siu or Szechuan beef, umami mushroom stir-fries, hearty stews.
Production Method
Indigenous (wild) yeast fermentation in 225L barrels and 500L French oak roll-fermenters; 10–15 day maceration; ~17 day fermentation and ~20 months aging in French oak; small stainless portion used.
