Tasting Note
Concentrated dark berries, violet and licorice with tobacco, wet chalk and saline minerality; velvety, fine-grained tannins, lively acidity and a long, sapid finish.

Food Pairing
Western: grilled ribeye, lamb chops, braised short ribs, aged cheeses (cheddar, Manchego). Asian: Korean BBQ (galbi/bulgogi), char siu, spicy Sichuan beef, miso-glazed dishes.

Production Method
Fermented 10–17 days in 225L barrels and 500L French oak roll-fermenters with wild yeasts; aged ~20 months in French oak (foudres/barrels), minimal irrigation for vintage.
