Tasting Note
Vibrant citrus and white stone fruit (pear, apple) with floral and herbal (thyme/rosemary) notes, pronounced chalky/saline minerality, crisp acidity, subtle oak spice and a long, clean finish.

Food Pairing
Western: roasted chicken with herb butter, grilled scallops, lobster with beurre blanc, creamy mushroom pasta. Asian: miso-glazed black cod, seared tuna/sashimi, tempura, milder Thai coconut or lemongrass dishes.

Production Method
Cold pre-fermentation maceration; fermented in French oak barrels and large 500L roll-fermentors at ≤16°C for 45–95 days; partial malolactic, 12–16 months in 2nd–4th use French oak with batonnage; unfined/unfiltered; wild yeasts.
