Tasting Note
Fresh citrus, white peach and jasmine with leesy vanilla and nutmeg. Chalky, saline minerality, bright incisive acidity and a long, focused, elegant finish.

Food Pairing
Roasted lobster, grilled scallops, creamy pasta, roast chicken; Asian: sushi/sashimi, miso-glazed black cod, tempura, Thai lemongrass chicken.

Production Method
Cold settling (6°C), fermentation in French oak (45–95 days at ~16°C), batonnage, partial malolactic, aged 12–16 months in 2nd–4th use French oak; unfined and unfiltered.

From 27 selected rows in the White Stones parcel (2.5 ha) of the Adrianna Vineyard; alluvial, stony soils at ~1,450 m altitude producing low-yield, high-acid fruit. Catena family estate project.
