Tasting Note
Bright cherry and red berry fruits with rose, tobacco, leather and tar notes; chalky minerality, medium-full body, firm fine tannins and a long, velvety finish.

Food Pairing
Western: braised beef, roasted lamb, porcini tagliatelle, aged cheeses. Asian: Peking duck, Korean BBQ (bulgogi/galbi), miso-glazed dishes, mushroom hotpot.

Production Method
Hand-harvested Nebbiolo; controlled-temperature fermentation and extended maceration in steel vats, followed by ~2 years aging in wood and bottle rest prior to release.

Produced by Ceretto, a multi-generation Piedmont family winery; owns parcels on the Asili cru (top of the hill) since 1968–73, practicing organic/biodynamic-influenced viticulture.
