Tasting Note
Perfumed Nebbiolo: red cherry, raspberry, rose petal, dried herbs, truffle and spice. Medium-full palate with fine, powdery tannins, bright acidity and a long, savory finish.

Food Pairing
Roasted lamb, braised short ribs, mushroom risotto, aged Parmigiano-Reggiano; Asian: Peking duck, Korean bulgogi, char siu, shiitake-soy braised dishes.

Production Method
Organic viticulture; hand-harvested Nebbiolo; stainless-steel fermentation with extended maceration; aged 12–24 months in large oak casks and further bottle aging.
