Tasting Note
Red cherry and raspberry with dried rose, tar, licoryce, tobacco and forest-floor notes. High acidity, firm ripe tannins, medium–full body and a long, savory finish.

Food Pairing
Western: roast beef, braised short ribs, truffle risotto, aged pecorino. Asian: Peking duck, Korean grilled short rib (galbi), char siu pork, mushroom-based Chinese or Japanese dishes.

Production Method
100% Nebbiolo from multiple Barolo communes; organic/biodynamic viticulture. Indigenous-yeast fermentation with extended maceration in stainless steel; ~24 months in French tonneaux and large oak casks, then bottle aging.

Vineyard Info
Ceretto, family-owned since 1930 and based in Alba, manages many Barolo crus (Brunate, Bussia, Prapò, Bricco Rocche). Known for quality Barolo production, organic/biodynamic practices and art-forward winery projects.
