Tasting Note
Red cherry, dried rose, tar, licorice and earthy leather notes. High acidity with refined, chalky tannins, concentrated mid-palate and a long, mineral finish. Youthful and tightly wound now; opens with decanting and bottle age.
Food Pairing
Western: braised beef, osso buco, roasted lamb, mushroom risotto, aged Parmigiano-Reggiano. Asian: Peking duck, soy-braised short ribs, Korean galbi, umami mushroom hot pot.
Production Method
Hand-harvested Nebbiolo; indigenous-yeast fermentation with extended maceration; malolactic in wood; ~30 months ageing in 300L barrels and large botti (≈10% new oak), followed by bottle ageing.
