Tasting Note
Perfumed Barolo: red cherry, pomegranate and dried rose petals with notes of licorice, tar and white truffle. Vibrant acidity, firm ripe tannins and mineral-driven long finish.
Food Pairing
Western: grilled lamb, pan-seared steak, braised beef, mushroom risotto, Beef Wellington, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, beef rendang, miso-glazed dishes and umami mushroom stir-fries.
Production Method
Hand-harvested Nebbiolo, extended skin maceration and traditional fermentation (indigenous yeasts). Aged in large oak casks (Slavonian/French) for ~24 months with further bottle élevage.

Produced by the Ceretto family estate (est. 1937). Fruit from the Prapò cru in Serralunga d'Alba (~2.4 ha, older vines planted in the 1970s); known for single-vineyard Barolos.
