Tasting Note
Dense red fruit (dark cherry, raspberry) with rose, violets, licorice, tobacco and baking spice. Powerful, finely textured, vibrant acidity and firm, chalky tannins; long, mineral finish with truffle and dried herb notes.
Food Pairing
Western: braised beef, roasted lamb, venison, mushroom risotto, aged Parmigiano-Reggiano. Asian: Peking duck, Korean braised short ribs (galbi), shiitake mushroom hot pot, Cantonese-style roast pork.
Production Method
Hand-harvested Nebbiolo; stainless-steel fermentation with long maceration; aged primarily in large oak casks (botti) for ~18–24 months; produced organically/biodynamically on estate vineyards.

Ceretto is a family-owned Langhe estate founded in the 1930s; third-generation management converted vineyards to organic/biodynamic practices and owns single-vineyard cru sites including Prapò in Serralunga d'Alba.
