Tasting Note
Perfumed and layered: rose petals, violet and tar on the nose; sour cherry, blackberry, dried plum, tobacco, licorice and savory earth on the palate. Firm, fine-grained tannins with bright acidity and a long mineral finish.

Food Pairing
Western: braised beef, roast lamb, osso buco, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Cantonese roast pork, mushroom hotpot, miso-glazed eggplant, spicy Sichuan beef.

Production Method
Hand-harvested Nebbiolo; indigenous-yeast fermentation in stainless steel; aged ~24 months in barrique/tonneaux, minimal filtration; bottle-rest prior to release. Low-yield, low-intervention/organic practices.

Produced by Cesare Bussolo (La Morra native, trained at Alba, long-time collaborator of Roberto Voerzio). Fossati vineyard at ~330m with clay-and-stone soils; tiny production (≈1,400–1,500 bottles in 2019).
