Tasting Note
Perfumed Nebbiolo: Morello cherry, raspberry, wild roses, anise, licorice, tar and cedar. Bone-dry with bright acidity, firm ripe tannins and a long, savory finish.

Food Pairing
Western: braised beef, osso buco, roasted lamb, truffle risotto, aged Parmigiano. Asian: Peking duck, miso-glazed short ribs, char siu, Korean galbi, umami-rich mushroom dishes.

Production Method
Hand-harvested Nebbiolo; spontaneous fermentation in stainless steel with extended maceration; aged ~24 months in oak (barriques/tonneaux and large casks), minimal filtration.

Vineyard Info
Made by Cesare Bussolo (La Morra); farms organically and leases the Fossati cru from Roberto Voerzio (20-year contract since 2014). Very small production.
