Tasting Note
Concentrated dark cherry and blackberry with licorice, truffle and forest-floor notes; mineral undercurrent, bitter chocolate and firm, chewy tannins. Very long, structured finish with medicinal reserve.

Food Pairing
Western: roast duck, beef Wellington, mushroom risotto, braised short rib. Asian: Peking duck, soy-braised beef, miso-glazed fish, shiitake & tofu hotpot.

Production Method
Hand-harvested from centenary vines; tiny-yield selection (first bunch on first shoot), indigenous yeast fermentation, aged ~18–24 months in French oak (high new-oak proportion).
