Tasting Note
Concentrated red cherry and blackberry with floral rose lift, truffle and sous-bois earth, baking spice and cedar. Silky yet powerful tannins, vibrant acidity and a long mineral finish.

Food Pairing
Western: roast lamb, braised short rib, mushroom risotto, aged Comté. Asian: Peking duck, char siu, miso‑glazed aubergine, Cantonese roasted pork, richer Korean BBQ (galbi).

Production Method
Hand-harvested from very old vines, selective picking of first bunches; natural/indigenous yeast fermentation with appreciable whole clusters and extended élevage in French oak barrels (18–24 months).
