Tasting Note
Concentrated black cherry and plum with violet and floral lift, dark chocolate, sous-bois earth, spice and mineral undertones. Velvety and concentrated with firm, polished tannins and a long, sapid finish.
Food Pairing
Western: roast lamb, braised beef, duck (roast or confit), venison, mushroom risotto, truffled dishes, aged Comté; Asian: Peking duck, char siu, Korean bulgogi, soy‑miso braised pork belly, mushroom hotpot.
Production Method
Hand-harvested; strict selection of the first bunch on the first shoot from centennial vines; whole-cluster fermentation; aged ~16–18 months in French oak with a high proportion of new barrels; tiny production.
Vineyard Info
Château de la Tour (Labet & Déchelette) is family-run, the largest owner inside Clos de Vougeot (~5.5 ha). Managed by François Labet (now with son Edouard); organic/biodynamic practices and very low yields from old vines (one hectare planted 1910).
