Tasting Note
Concentrated black and red cherry, plum and blueberry with violet and rose-petal lift, crushed stone/mineral, spice and subtle smoky-earth notes. Layered, textural palate with powdery, firm tannins and a long, perfumed finish.

Food Pairing
Roast beef, lamb, game or mushroom risotto; beef bourguignon, aged Comté or hard cheeses. Asian pairings: Peking duck, char siu (barbecued pork), braised beef with soy/miso, mushroom and oyster sauce stir-fries.

Production Method
Selection of the first bunch on centenarian vines; organic/biodynamic viticulture, appreciable whole-cluster fermentation, aged long in oak (special Chassin barrels for cuvée), very limited production.

Château de la Tour (Labet family) is the largest single owner in Clos de Vougeot; run by François Labet and son Edouard. Estate farms old vines (one block planted 1910) under organic/biodynamic regimes.
