Tasting Note
Concentrated black cherry and cassis layered with violet, spice, underbrush and saline mineral notes. Medium-full, dense core with powdery grainy tannins, dark chocolate hints and an enduring, saline finish.

Food Pairing
Roast lamb, beef short ribs, mushroom risotto, duck confit; Asian: Peking duck, miso-glazed fish, Korean braised short ribs (galbi-jjim), shiitake hot pot.

Production Method
Organic viticulture; hand-harvested selection of first bunches nearest the trunk; ~60–75% whole-cluster fermentation with indigenous yeasts; matured in French oak (two of four new barrels reported).

Château de la Tour (François Labet) owns extensive holdings in Clos de Vougeot. 'Hommage à Jean Morin' launched 2010 from centenarian vines (planted c.1910); produced only in top vintages (c.900 bottles in 2020).
