Tasting Note
Concentrated dark cherry, plum and blackberry with violet florals, truffle, leather and baking spice; velvety texture, polished yet firm tannins and a long, spicy finish.

Food Pairing
Western: roast beef, prime rib, braised lamb, venison, duck confit, mushroom risotto. Asian: Peking/roast duck with hoisin, char siu pork, Korean bulgogi, mushroom hot-pot, soy/ginger glazed short ribs.

Production Method
Traditional Burgundian vinification with extended maceration, indigenous yeasts often used; matured ~15–18 months in French oak (portion new barrels).
