Tasting Note
Concentrated black cherry, raspberry and dark plum with undergrowth, truffle and licorice notes. Silky, saline mid-palate, fine-grained tannins and a long, spicy finish.

Food Pairing
Roast beef, beef bourguignon, venison, mushroom risotto; aged Comté or Camembert. Asian: Peking duck, char siu/pork belly, miso-glazed fish, shiitake/soy mushroom stir-fries.

Production Method
Organic/biodynamic vineyard practices; high proportion whole-cluster/unstemmed vinification, indigenous yeasts, long élevage in French oak, minimal filtration and low sulfur at bottling.

Family-owned Château de la Tour (Labet family), largest single owner within the Clos de Vougeot (≈5.5–6 ha). Farming organic since 1992; historic vines include a 1910 parcel; wines vinified and aged inside the Clos.
