Tasting Note
Concentrated dark-berry and plum fruit with violet and peony florals, tobacco, mint and dark chocolate. Muscular yet balanced, with powdery tannins, bright acidity and a long, chalky finish.

Food Pairing
Western: roasted beef, lamb, duck confit, wild game, mushroom risotto, aged comté or parmesan. Asian: Peking duck, Korean BBQ (galbi/bulgogi), char siu, miso-glazed fish, mushroom hot-pot or soy-braised short ribs.

Production Method
From old-vine Pinot Noir parcels; vinified mainly unstemmed with some whole-cluster, indigenous yeasts, long élevage in new French oak (high % for Vieilles Vignes), minimal sulfur and no filtration.

Vineyard Info
Château de la Tour (Labet family) is the largest owner within the Clos de Vougeot (~5.5 ha). Estate farms organically since the 1990s; Vieilles Vignes parcel includes vines planted in 1910.
