Tasting Note
Silky pale-pink rosé with delicate bubbles. Aromas of hibiscus, lilac and red berries, with subtle spice and a hint of liquorice. Bright acidity, round palate and a long, elegant finish.

Food Pairing
Western: oysters, scallops, smoked salmon, roasted chicken, duck, berry tarts. Asian: sushi/sashimi, tempura, steamed crab, dim sum, spicy Asian starters.

Production Method
Méthode traditionnelle (bottle secondary fermentation). NV blend; dosage ~9 g/L; aged on lees approximately 42 months.
