Tasting Note
Deep golden with fine persistent bubbles. Intense nose of white blossom, citrus, almonds and light pastry/toasted notes. Silky, precise palate with bright tension and a long, lemony, pastry-tinged finish.

Food Pairing
Western: oysters, lobster, grilled sea bass, creamy risotto, Bresse chicken with girolles, braised suckling pig. Asian: sashimi/sushi, tempura, Cantonese dim sum, Thai coconut fish curry, Japanese grilled fish.

Production Method
Méthode traditionnelle: first-press juice only, 10% vinified in old oak, aged ~10 years on lees; vintage-dated, low dosage (4 g/L).
