Tasting Note
Powerful, mineral-driven Chardonnay with yellow stone fruits (peach, apricot), white flowers, light honey and hazelnut notes; creamy mid-palate and a long, saline, elegant finish.

Food Pairing
Western: roast chicken, lobster with beurre blanc, creamy mushroom risotto, aged Comté; Asian: miso-glazed black cod, tempura, sushi (fatty fish), lightly spiced Thai or Cantonese seafood dishes.

Production Method
Biodynamic viticulture; vertical pressing, vinified in 10 hL tuns and demi-muids, aged 20–30 months on the lees with minimal new oak.
