Tasting Note
Perfumed dark-berry core of black cherry, bramble and wild strawberry with rose, spice, forest-floor and licorice notes; fine-grained tannins, bright mineral acidity and a saline, long finish.

Food Pairing
Western: roast duck, porcini risotto, grilled pork chop, braised short rib, aged cheeses. Asian: Peking duck, char siu, mushroom hotpot, Korean BBQ, miso-glazed salmon.

Production Method
Fermented with indigenous yeasts, ~50–60% whole clusters; matured 14–18 months in French oak (mostly used barrels); bottled unfined and unfiltered.

Historic family domaine (since 1834) in Savigny-lès-Beaune, run by François and Claude de Nicolay. Biodynamic-certified; Les Bressandes comprises ~1.45 ha of mid-slope parcels, vines ~35–39 years old.
