Tasting Note
Concentrated red and black cherry, raspberry and plum with raw cocoa, warm spice, forest-floor and chalky mineral notes. Medium-full body, bright acidity, fine ripe tannins and a long, mineral-driven finish.

Food Pairing
Western: roast duck, beef Bourguignon, lamb, coq au vin, mushroom risotto. Asian: Peking duck, char siu (Cantonese roast pork), Korean BBQ (galbi), miso-glazed black cod.

Production Method
Biodynamic farming; native-yeast fermentations in truncated-cone oak vats with partial whole-cluster; minimal pumping and SO2; aged 15–18 months mainly in 228L barrels with a portion finished in Stockinger foudres; bottled unfined/unfiltered.
