Tasting Note

Perfumed and precise: red cherry, wild raspberry, rose petal and violet, with chalky mineral, subtle spice and gentle cedar from oak. Silky texture, fine-grained tannins and a long saline finish.

Food Pairing

Western: roast duck, coq au vin, beef bavette, mushroom risotto, aged Époisses or comté. Asian: Peking duck, char siu, Korean bulgogi, miso‑glazed salmon, shiitake hot pot, soy‑ginger pork belly.

Production Method

Biodynamic viticulture; 100% whole‑cluster fermentation in wooden vats; matured ~18 months in barrels (≈15% new oak); minimal SO2 and traditional cellar techniques.

Domaine Chandon de Briailles, family estate (est. 1834) run by Claude & François de Nicolay; biodynamic since mid‑2000s; owns ~0.44 ha in the high, steep Clos du Roi parcels (planted 1961/2018).
