Tasting Note
Red and dark berries (cherry, strawberry), peony and rose florals, sandalwood, cedar and dark chocolate with a graphite-mineral undercurrent; fine powdery tannins, bright acidity and a focused, lingering finish.

Food Pairing
Roast lamb, beef short ribs, mushroom risotto, duck confit; Asian: Peking duck, char siu, Korean BBQ, miso-glazed salmon or eggplant, soy-braised short ribs; aged cow cheeses.

Production Method
Biodynamic viticulture, hand-harvested; frequent whole-cluster vinification, native-yeast fermentations, minimal new oak and barrel ageing; some parcels worked by horse.

Family domaine (de Nicolay) owned since 1834; run by siblings Claude and François de Nicolay. Holdings across Corton, Savigny-lès-Beaune and Pernand; fully converted to biodynamics in the 2000s.
