Tasting Note
Strawberry, pomegranate and cherry with floral (lavender/rose), spicy cedar and discreet earth. Medium-plus body, fresh acidity and fine-grained, firm tannins; mineral-driven, focused finish.

Western: roast lamb, duck breast, beef short ribs, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, miso‑glazed black cod, soy‑braised short ribs, shiitake soba.

Production Method
Biodynamic viticulture; largely whole‑cluster fermentation with indigenous yeasts, minimal intervention (no pumps; limited sulfur in some vintages); aged 15–18 months in French oak with low percentage of new barrels.
