Bright red cherry and raspberry with peony, rose petal and iron-mineral notes; medium-full, velvety texture, fine-grained tannins and a long, lifted finish.

Food Pairing

Roast lamb, beef or game; mushroom risotto, aged cheeses (western). Peking duck, char siu, beef rendang, mushroom hot pot or braised short ribs (Asian).

Production Method

Biodynamic vineyard practices; whole-berry fermentations in truncated wooden vats (no pumps/no added sulphites); matured 15–18 months in French oak (≈85% used barrels, remainder new).

Domaine Chandon de Briailles (de Nicolay siblings) — small, high-quality holdings in Corton worked biodynamically, with some parcels farmed by horse; estate converted from organic to biodynamic practices.
