Tasting Note
Mineral-driven Chardonnay with lemon, pear, white flowers, toasted hazelnut and saline/stony notes. Creamy lees texture balanced by bright acidity and subtle oak spice; long, saline finish.

Food Pairing
Western: roasted or grilled white fish, seared scallops, lobster thermidor, roast chicken with cream sauce, mushroom risotto. Asian: sushi/sashimi, miso-glazed black cod, tempura prawns, steamed sea bass with ginger and scallion, light Thai or Cantonese seafood dishes.

Production Method
Hand-harvested; vinified without pumps or added sulphites, native-yeast fermentation in 10hl tuns/demi-muids; aged 20–30 months on the lees in large oak vessels.

Family domaine since 1834 (de Nicolay family). 1.12 ha parcels planted 1985, 1992 and 2019. Organic/biodynamic viticulture (Demeter certified), manual work and horse traction in many parcels.
