Tasting Note
Perfumed red-fruit core of cherry and red currant with rose petal, pepper, forest-floor and charcuterie notes. Light-to-medium body, fine rounded tannins, bright acidity and a long floral-spiced finish.

Western: roast lamb, grilled beef, charcuterie, mushroom risotto. Asian: Peking duck, char siu / Cantonese roast pork, Korean BBQ, mildly spicy Szechuan beef.

Hand‑picked fruit; co‑fermented Shiraz with 5% Viognier; minimal whole‑bunch inclusion in 2011; ~28% new oak; small-batch, cool-climate fermentation and maturation.
