Tasting Note
Deep ruby with concentrated black fruits (cassis, blackberry, fig), spice, licorice and cedar. Full-bodied, velvety tannins, dark chocolate and toasted-oak notes; long, elegant finish.

Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Korean BBQ (galbi/bulgogi), Cantonese roast duck or char siu, spicy Sichuan beef, teriyaki-style beef dishes.
Production Method
Hand-harvested; 100% de-stemmed; native-yeast fermentation (95% in 75hL French oak vats, 5% in new barrels); 4–5 weeks maceration; malolactic in new oak; aged 26 months in 100% new French oak; organic/biodynamic certified.
