Tasting Note

Blackberry and black cherry core with tobacco, licorice, graphite and cedar notes. Medium-full body, firm chewy tannins, earthy/leafy tertiary notes of leather and truffle; long, savory finish.

Western: roast lamb, braised beef, venison, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu (BBQ pork), Korean BBQ short ribs, soy-braised beef, mushroom hot pot.


Production Method

Traditional fermentation in vats with malolactic conversion; aged 15–18 months in French oak barrels (majority new oak).
