Tasting Note
Concentrated blackberry and plum with violets, graphite and black truffle. Creamy, velvety tannins, saline limestone minerality and baking-spice notes; powerful yet elegant with a long, energetic finish.

Food Pairing
Western: roast lamb, braised short ribs, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), beef hotpot or braised beef with soy and star anise, mushroom-based hot pots.

Production Method
Hand-harvested; whole-berry fermentation in small stainless steel vats with manual pigeage; 22–30 day maceration; malolactic in vats/barrels; aged 14–18 months in French oak (≈50% new, 48% once-used) with small amphora component; biodynamic practices in place.
