Tasting Note
Dense ruby with aromas of black cherry, dried red fruit, leather, cedar, tobacco and baking spice. Powerful, fine-grained tannins, bright acidity and savory mineral notes; layered tertiary tones of leather and tea with a long, saline, persistent finish.

Western: Bistecca alla Fiorentina, roasted or braised beef, lamb, wild game, mushroom risotto, aged pecorino. Asian: Peking duck, char siu, Korean BBQ (galbi/bulgogi), Sichuan-style braised beef, Chinese red-braised pork belly.

Production Method
Hand-harvested Sangiovese; temperature-controlled stainless fermentation with ~25-day maceration, malolactic in concrete; long aging (~4 years) in large Slavonian and French oak casks (botti), followed by 2–3 years bottle refinement.

Col d'Orcia estate (historic Montalcino producer). Poggio al Vento single vineyard (planted 1974, ~7 ha) on sandy, calcareous 'alberese' soils; produced only in top vintages; estate practices organic viticulture.
