Tasting Note
Perfumed red and black cherry, plum, rose petal, forest floor, spice and cocoa; silky mid-palate, fine-grained tannins and vibrant acidity with a long, mineral-tinged finish.

Western: roast duck, lamb, beef, mushroom risotto, charcuterie, aged cheeses. Asian: Peking duck, char siu, soy/hoisin-glazed pork, miso aubergine, mushroom stir-fry, teriyaki salmon.

Production Method
Hand-harvested fruit, often whole-bunch fermentation; fermented in traditional vats and matured 12–24 months in French oak (portion new).
