Tasting Note
Ripe red-cherry and raspberry core with violet, forest-floor and spicy notes; subtle coffee/earth. Medium–full, finely textured tannins, bright acidity and a saline, persistent finish. Elegant and ageworthy.

Western: roast duck, venison, rib‑eye, beef short ribs, truffle dishes, aged Comté and other hard cheeses. Asian: Peking duck, char siu, miso‑glazed cod or aubergine, beef yakiniku or bulgogi, mushroom hot pot, soy‑braised short ribs.
Production Method
Organic viticulture, low yields and massal selection; partial whole-bunch fermentation, gentle extraction and 18–22 months in French oak with a portion of new barrels.
