Tasting Note
Mineral-driven citrus and white peach with saline, flinty notes, creamy lees, subtle toast and spice. Bright acidity, concentrated mid-palate and a long, chalky citrus finish.

Food Pairing
Western: roast chicken, mushroom risotto, grilled crayfish with beurre blanc, seared scallops. Asian: miso-glazed black cod, tempura prawns, sashimi/sushi (salmon), creamy coconut Thai dishes.

Production Method
Hand-harvested; wild fermentations in biodynamic barrels, concrete eggs and amphorae; matured ~8 months in 35% new French puncheons; malolactic fermentation; bottled unfined and unfiltered.
