Tasting Note
Perfumed, medium-bodied cabernet: black cherry, blackcurrant, violets, dusted dark chocolate and a sea-iodine minerality. Silky fine tannins, elegant structure, long savoury finish.

Food Pairing
Western: roast beef, lamb, venison, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan-style beef.

Production Method
Hand-harvested on a full-moon fruit day; wild-yeast fermentation with short skin maceration in terracotta (300L) amphorae, then pressed and matured in mostly new French oak for ~6 months. Minimal-intervention/biodynamic practice.
