Tasting Note
Bright, mineral-driven Sauvignon Blanc with lime, nectarine, elderflower and honeysuckle aromas, candied citrus and wet-stone minerality. Crisp, saline finish with subtle oak spice and lingering citrus-bitter notes.
Food Pairing
Western: oysters, grilled white fish with lemon butter, scallops, ceviche, goat cheese, roast chicken with lemon. Asian: sashimi/sushi, steamed fish with ginger and scallions, Thai seafood salad, Vietnamese-style fresh seafood.
Production Method
Hand-harvested; direct pressing and long settling. Fermented and aged ~12 months in French oak (large barrels 320–600L) on lees with minimal intervention; bottled unfined/unfiltered.
