Tasting Note
Pure, flinty Sauvignon: bright citrus, nectarine and white-peach fruit with subtle herb, toasted almond and fine oak; silky, concentrated texture, vivid acidity and a long mineral/saline finish.

Western: oysters, grilled scallops, poached/roast white fish, goat cheese, roast chicken. Asian: sushi/sashimi, sashimi, light Thai seafood curry, Vietnamese spring rolls, Japanese tempura.

Production Method
Biodynamic viticulture, hand-harvested grapes; native-yeast fermentations with barrel/foudre ageing (c.11–12 months), limited new oak (c.20–25%).
