Tasting Note
Pure, mineral-driven Sauvignon Blanc: flint and chalky stone, citrus zest, green herbs, white peach and saline finish. Precise, textured palate with bright acidity and long stony finish.
Food Pairing
Western: lobster, scallops, grilled turbot, roast chicken, Comté; Asian: sushi/sashimi, Cantonese crab, tempura prawns, Vietnamese herb salads.
Production Method
Hand-harvested fruit; barrel fermentation and élevage (demi‑muids, large foudres and cigar‑shaped barrels) on fine lees with occasional bâtonnage; minimal sulphur; biodynamic viticulture.
Vineyard Info
Originally made by Didier Dagueneau; fruit mainly from La Folie (Saint‑Laurent) parcel. Estate works biodynamically with very low yields; now managed by Louis‑Benjamin Dagueneau.
