Tasting Note
Concentrated Sauvignon Blanc with citrus, green apple, dill and cornichon notes over a pronounced flinty/mineral core; fine texture, saline lift and long, precise finish with subtle oak spice.

Production Method
Hand-harvested fruit; whole-berry pressing, indigenous yeast fermentation in demi-muids and cigar-shaped French oak, 11–12 months on fine lees with regular bâtonnage; light filtration.
